What Role Does Temperature Play?
Medium Temperature Systems (Coolers) will
provide holding temperatures of 36° and above. This is how standard systems
are sized and equipped. For temperatures below 36°, a Keg Cooler System
will be required. These systems can provide holding temperatures below 30 degrees
if required. Evaporator coils are equipped with electric defrost heaters with
timers to operate properly at these lower temperatures. Below the Keg Cooler range
a Low Temperature System (Freezers) will be needed. These systems are equipped
with special compressors, refrigerants and oils to perform well at low temperatures.
A standard freezer system is sized for –10° holding temperatures.
